Favorite Fall Recipes

Ok, so I've been saying forever that I would post the recipe for rice with green chilis on my blog. Thanks to a burning desire to be in Davene's cookbook, I have been spurred on to finally post the recipe!

Steve's Favorite Rice With Green Chilis
1 cup uncooked rice
1 4 oz. can diced green chilis (or fresh roasted green chilis)
1/2 lb. Monterrey Jack or Cheddar cheese
1 1/4 c sour cream
2 T butter
salt and pepper to taste

Preheat oven to 350.
Cook rice according to package directions. Combine cooked rice, chilis, 3/4 of cheese, sour cream, salt and pepper. Mix lightly but thoroughly. Place in a 2 qt. baking dish. Dot with butter and sprinkle with remaining cheese. Bake uncovered @ 350 for 30 minutes. Makes 6 servings.

Hey, I tried Mr. Linky and ended up posting twice...not that I intended to do that! I'm not sure how to delete it so I'll just leave it for now.

Anyway, I submitted that recipe that I "stole" from my friend's blog; is that cheating or what? :) But it is my new favorite fall recipe.

And, by the way, this rice recipe looks scrumptious. Anything with that much cheese and sour cream has got to be good! :) Thanks for posting it!

I'm only showing you one time. Thanks for posting. BTW, that rice recipe isn't very spicy. It's kind of a mellow side dish. I guess it depends on how hot your peppers are.
